RECIPES
Week 1
Shepherd’s Pie
Materials
- 1 lb hamburger
- ¼ cup diced dried onion
- 1 can cream of mushroom soup
- 2 cups potato pearls
- 1 can green beans
- 2 cups cheddar cheese
Instructions
- Brown ground beef with salt pepper and onion.Place green beans and bottom of an 9 x 13 panLayer hamburger on top of green beansSpread cream of mushroom soup on top of hamburgerLayer mashed potatoes on top of cream soupLayer cheddar cheese on top of potatoesBake at 350 until cream of soup is Bubbly or cheese is bubbling
Cheddar Bacon Ranch Chicken Pasta
Materials
- 1 lb mostaccioli or other short pasta
- 6 TBSP crumbled bacon
- 1 TBSP butter
- 2 boneless skinless chicken breast halves, cut into bite-size pieces
- 2 TBSP flour
- 1 paccket ranch dressing mix
- 2 cups milk
- 1 cup shredded cheddar cheese
- salt & pepper to taste
Instructions
- 1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
2. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.
3. Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
4. Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed.
5. Add the cheese sauce to the reserved pasta
Tacos
Materials
- 2 lb hamburger When you buy a hamburger it list percentage of fat. The cheaper hamburger has more fat. The hamburger we get from the farm has almost no fat so you don't have to rinse it but if you buy cheap hamburger you're going to have to rinse the fat off. 80/20 is about as low as I would buy on your budget.
- 2 tsp dried onions or to taste
- 2 tsp salt or to taste
- 1 tsp pepper or to taste
- 1 can refried beans
- 1 can black olives
- 2 cups cheddar cheese
- 1 head lettuce
- 1 pkg tortillas
- salsa for topping
- sour cream for topping
Instructions
- Brown hamburger in Skillet. If you are training it ad onion salt and pepper after it has been rinsed you can also add taco seasoning if you prefer.

Baked Potato Bar
Materials
- Baking potatoe As many as you need but they have to cook or an hour so I would put a couple in so you don't have to wait that long for them again or feed your roommates.

Instructions
- Wash potatoes, poke holes onto potatoes with a fork you can rubBaked potatoes in oven at 350-400 for an hour and a half or until you can poke a fork into the potato and it goes in easily.Toppings can include: cheese, butter, salt, pepper, sour cream, chili, broccoli, Bacon, salsa, ranch.
Week 2
Caramel Apple Pork Chops
Materials
- 4 boneless pork loin chops 3/4 inch thick
- Vegetable oil
- 1/4 cup light brown sugar packed
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- salt & pepper
- 2 Barton apples (granny Smith, pink lady or Braeburn)
- 4 TBSP butter
Instructions
- Heat a skillet over medium high heat. Brush pork chops lightly with oil and cook for 5 to 6 minutes on each side or until evenly browned. Remove from the pan and keep warm.In small mixing bowl, combine brown sugar, cinnamon, not make and salt-and-pepper to taste.m Core Apple and slice and 1/2 inch wedges.Add butter to the skillet and sister in the apples and brown sugar mixture. Cover and cook over medium heat 3 to 4 minutes, just to tell the apples are tender. Remove the apples with a slotted spoon and arrange on top of the chops; Keeping warm.Continue cooking the mixture in the skillet, uncovered, and tell the sauce thickens slightly. Spoon the sauce over the apples and chops. Sprinkle with pecans. Makes 4 servings.
Sometimes I double this sauce because we love it so much.
Spaghetti
Materials
- 1 LB hamburge
- 1 can hunts 4 cheese sauce
- 1/2 box spagetti noodles
- parmesan cheese
Instructions
- brown hamburger, rinse and drain, seson with salt/pepper and dried onions
- boil water, add salt, add noodles, cook according to pkgadd hamburger to sauce and warm
Parmessan Bread
Materials
- slices bread
- 1.5 TBSP ranch dressing per slicee
- dried parmesan xheese
Instructions
- Toast slices of bread so they don't go soggy when you Royal them. Spread ranch dressing on one side of toasted bread. Sprinkle with Parmesan cheese, Broil in Oven until browned. Keep an eye on it or it will burn. If Browns were Broyles very fast!
Chicken Enchiladas
Materials
- 1 pkg tortillas I like corn but you can use flour
- 2 cans cream of chicken soup
- 1 cup sour cream
- 1 can chopped green chilies
- 1 can black olives, slice them
- 2 cups shredded cheddar cheese
- 4 green onions, chopped
- 1/4 cup milk
- 2 cans cooked chicken
Instructions
- Combined soup, sour cream, Chilies, olives,3/4 Cup cheese, onion, and milk. Mix together and divide in half. In one half add chicken. Spread 3 tablespoons of mixture onto bottom of 9×13 casserole dish. Fill tortilla shells, Roll and place in casserole dish side-by-side. Spread the remaining half of the mixture on top of the role tortillas. Sprinkle the remaining cheese on top. Bake at 375 for 25 minutes.
French Dip Sandwhich
Materials
- bread or rolls
- 1 pkg Au jus
- 1 can brisket
- salt & pepper
- miracle whip
Instructions
- Heat the brisket in the microwave after salting and peppering and shredding it.If you're using bread toast it in the toaster. If you're using rolls broil them in the oven,,,watch carefully so you don't burn! Make the au jus according to the package directions. Lightly spread Miracle Whip on the bread and then put the meat on.
We usually eat this with a Salad and aside of french fries that you can bake in your oven found in the frozen section in the grocery store.
Week 3
Zesty Italian Casserole
Materials
- 1 lb ground beef
- 1/4 cup chopped onion
- 1/2 pkg taco mix (3 TBSP equals one package) if using bulk
- 8 oz tomato sauce (tiny cans)
- 1 1/2 cups mozzarella cheese
- 1/2 cup sour cream
- 1 pkg 6 oz crescent rolls
- 1/3 cup Parmesan cheese
- 2 TBSP melted butter
- 3 OZ cream cheese
Instructions
- Ground beef and onion; drain. Stir in in tomato sauce and taco mix. Heat until hot and bubbly. Combined mozzarella, cream cheese and sour cream. Poor hot meat into ungreased 8 x 12 or 9 x 13" baking pan. Spoon cheese mixture over meat and distribute. Unrolled to flat and place crescent rolls over cheese. Melt butter and Parmesan and spread or brush over Crescent. Bake covered 18 to 25 minutes at 350.
Stroganoff Chicken/Beef
Materials
- 1 lb chicken or beef cut into small slices
- 1 can Cream of chicken (for chicken) Cream of mushroom (for beef)
- 3 TBSP sour cream
- 1 pkg egg noodles
Instructions
- Cook your meat in a crockpot during the day 4-6 hours on low or cut the meet up and fry it in a skillet pan. Salt and pepper meat. (if you are using a crockpot add a beef bouillon or chicken bouillon cube.)Mix cream of soup into meat until warm (crockpot about an hour)Boil noodlesAdd sour cream to meat mixtureDish mixture on top of noodles when you serve plates
Chili Cheese Fritos
Materials
- 1 bag chili cheese fritos
- 1 can chili
- 1/2 head lettuce
- 1 cup shredded cheddar cheese
- salsa
- sour cream or ranch dressing
- 1 can black olives
Instructions
- heat chili, stack with chips, lettuce, chili, cjheese and toppings
Week 4
Chicken Rolls
Yield: 8
Materials
- 1 pkg cream cheese
- 1.5 tsp dried onion
- 2-3 cans chicken or chicken breast, cooked and shredded
- 1/2 tsp pepper
- 2-3 pkg crescent rolls
- 1/2 cup melted margine or butter
- 1 pkg stove top stuffing (with seasoning crushed up. I usually use a blender or food processor)
- 1 can cream of chicken soup
Instructions
- Mix cream cheese, onion, chicken and Pepper. Spread out one package crescent rolls. Chicken mixture on top and Cover with crescent roll. Dip and melted butter and then dip into crushed stovetop. Place on baking sheet and bake at 350 for 20 minutes. In a sauce pan warm-up cream of chicken soup and dilute it with 3/4 a can of milk or water. Drizzle sauce on top of baked chicken roll.
Lasagna
Materials
- 2 lb hamburger
- 1 lb sausage (optional)
- 2 cans spaghetti sauce I use Hunts 4 cheese
- 2 cups mozzarella cheese
- 2 cups cottage cheese
- 1/2 cup parmesan cheese
Instructions
- Boil water add 1 tablespoon of salt to boiling waterCook lasagna noodlesDrain noodles Vandelay flat on tinfoil to dryBrown hamburger, sausage, salt-and-pepper, and dries onion.Drain hamburger mixtureAdd spaghetti sauce to hamburger mixture Cook on low. Make sure you have a lid on it or it might splatter all over.Mix cottage cheese and mozzarella cheeseLayer starting with a fourth a cup of spaghetti mixturelayer noodlesLayer sauceLayer cheese mixtureLayer noodles, sauce, cheese mixture, repeat until out of everythingYou should end with the cheese mixture and then sprinkle the Parmesan cheese on top
Bake at 350 for one hour. You can cover the lasagna with the tinfoil you use to drain the noodles on for the first half an hour or 45 minutes
Hawaiian Haystacks
Materials
- 1 bag chow mein noodles
- 4 cup minute rice
- 1 can Cream of chicken soup (dilute with ¾ cup of milk)
- 2 cups chicken (heat, salt, pepper)
- 1 can Pineapple tidbits
- 2 cups shredded cheddar cheese
- 1 cans olives sliced
- 1 bunch green onions sliced
- mushooms
- green peas
- coconut
Instructions
- Stack noodles, rice chicken, gravy then toppings
Week 5
Gunpowder Chicken
Materials
- 2 cans cooked chicken seasoned with garlic pepper and salt
- 2 cups dry rice (cooked so that it is no longer dry)
- 1 cup plain yogurt (sometimes I have substituted sour cream or just omitted this. If you are omitting this add another half a cup of liquid.)
- 1 can cream of chicken soup
- 1 cup juice from chicken or use chicken broth (One bouillon cube to one cup of water)
- 1 roll ritz crackers crushed
- 1 tsp poppyseed
Instructions
- Mix soup, rice, chicken, yogurt, water
In buttered 9 x 13 pan spread mixturecrumble crackersmix with melted buttersprinkle crushed Ritz crackers on topsprinkle poppy seeds on top of crackersBake at 350 for 20 to 30 minutes or until bubbly.
Meatball Sub Sandwiches
Yield: 6
Materials
- 8 frozen meatballs
- 2 hoggi buns sliced lengthwise
- 2 tsp olive oil or butter or margarine
- 2 TBSP parmesan cheese
- 2 cups Hunts 4 cheese spagetti sauce
- 4 sliced provolone cheese slices
- 1 tsp garlic
Instructions
- microwave frozen meatballs 4-5 min or until warm
- put meatballs in sauce and heat
- put oil in pan with garlic, warm
put cut side of bread in pan and heat until toasted and brown
- remove from pan and place bottom buns on cookiesheet topside down
- sprinkle with parmesan cheese
- add meatballs and sauce, about 4 per bun extra sauce as needed
- place 2 slices provolone cheese on meatballs
- broil until melted
- immediately top and serve

Week 6
Lemon Butter Chicken
Materials
- 8 bone-in, skin-on chicken thighs
- salt & pepper, to taste
- 3 TBSP unsalted butter, divided
- 3 tsp minced garlic
- 1 cup chicken broth or 1 cup h2o with 1 bullion cube
- 1/2 cup heavy cream
- 1/4 cup fresh grated pamesan cheese
- 1 lemon juiced
- 1 tsp dried tyme
- 2 cups baby spinache
Instructions
- Season chicken thighs with salt and pepper, to taste.Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 4 minutes per side; drain excess fat and set aside.Melt remaining tablespoon butter in the skillet. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, Parmesan, lemon juice and thyme.Add chickenBring to a boil; reduce heat, stir in spinach, and simmer until the spinach has wilted and the sauce has slightly thickened, about 3-5 minutes. Return chicken to the skillet.Serve immediately.
Steak Fajitas
Ingredients
- 1 onion, yellow
- 1 red pepper
- 1 lb stew meat any steak will work this is just cut
- 1 pkg fajita mix
- 1/2 pkg tortilla shells
- 1/2 head lettuce
- 1 cup cheddar cheese
Instructions
- slice vegies
- cook meat in oil until done 3-5 min each side remove from pan
- cook veggies until tender
- add seasoning follow directions on pkg
- assembble and add toppings
Chicken Pot Pie
Equipment
- pie pan
Ingredients
- 1 pkg premade pie crust
- 1 pkg 12 oz frozen veg peas & carrots
- 1 can cream of chicken soup
- 1/2 cup milk
- 1 can canned chicken
Instructions
- Heat the oven to 400°F.
- Line the bottom of a 9-inch pie plate with 1 pie crust.
- mix soup, milk, chicken and vegetables the put mixture into the pie plate
- Place top crust over filling. Pinch the top and bottom crusts together. Cut slits in the top crust.
